Spicy Chicken Dip Is On the Low Carb Menu

I mean, who doesn't like dip? Dip makes people happy. Dip makes people feel loved. Most dips makes people forget about their pants with zippers and embrace the yoga pants. 😉 But no worries when Spicy Chicken Dip is on the menu. It's low carb, totally delicious and comforting. Not to mention 'it will be the hit of any gathering' and will make everyone jealous of your culinary cleverness.



INGREDIENTS:

  • 8 ounces cream cheese, softened

  • 1/2 cup sour cream

  • 1/4 cup salsa

  • 1/4 cup minced jalapeno, more or less to taste

  • 2 teaspoons ground cumin

  • 1/2 cup grated monterey jack cheese

  • 1/2 cup grated cheddar cheese

  • 1 1/2 cups cooked, shredded chicken

  • 1 tablespoon minced cilantro

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Spray an 8x8 dish with non-stick spray.

  2. Add everything but the cilantro to a mixing bowl and stir well to combine.

  3. Spread into prepared baking dish and bake uncovered for 15 minutes.

  4. Sprinkle the top with the cilantro before serving.

  5. Serve with gluten free crackers, bread, or raw vegetables for dipping.
